Why I LOVE Breakfast!

You know one thing that REALLY confuses me?

People that don’t eat breakfast. It’s either “Oh, I don’t have time,” or “I’m just no hungry in the morning.”

To that I am just utterly and completely confused. For me, breakfast is the absolutely, hands down, MOST important meal of my day! There’s nothing like some good food to get me going as soon as I get up. It is pretty much what can get me out of bed in the morning if nothing else can!

So what is my go-to breakfast meal?

Eggs. But not just plain ole’ ordinary scrambled or hard boiled eggs, no. This is a glorious concoction my boyfriend and I have perfected over the past few months, and have created different variations that make breakfast a veritable flavor explosion of joy. YES, IT’S THAT GOOD, OKAY.

To create this amazing concoction you will need:

2 Organic, Cage Free Vegetarian-Fed Eggs with Omega 3  (Okay, all the prefixes are not absolutely necessary- but I recommend going that route as they will be free of antibiotics and hormones!)

Egg Whites (sometimes I’ll buy the carton of egg whites and pour them in, or just use 2 more eggs from your carton)

1/4 cup Onion

1/2 Bell Pepper (I normally use Green ones, but sometimes I’ll get CRAZY and use Red or Yellow!)

Handful of Spinach

1 tsp. Curry Powder (Optional)

1/4 cup Black Beans (Optional)

Sriracha Sauce -OR- Salsa (However much you want- I prefer an entire layer of molten lava on top. But that’s just me.)

STEP 1: Chop up the onions and bell pepper. Preferably have some already chopped up if you’re planning on cooking this first thing in the morning. I know from experience that trying to chop an onion at 7 AM is not usually a good idea and may result in injury.

STEP 2: Spritz some cooking oil in a pan, and sautee the onions and pepper for about 3 minutes.

STEP 3: Add in the eggs, and scramble it all together.

STEP 4: Once they are almost done, throw in some spinach or black beans if you’re feeling extra fibrous and fancy. Also throw in your desired spices, I LOVE curry powder in mine!

STEP 5: Scramble everything together until it’s done, place in bowl, top with Sriracha sauce or Salsa, whichever you desire! I love the spiciness of it- it really wakes me up in the morning.

I love this breakfast because it’s a great protein/fat combo to really kick-start that metabolism in the morning after your sleepytime fast. Grab a cup of black coffee to get it going even farther! If you have a workout planned early in the day, I recommend adding some oatmeal or a slice of low-glycemic Ezekiel bread for a healthy, complex carb to replenish those glycogen stores to fuel your workout, especially if you are lifting heavy!
