It’s finally beginning to feel like Summer here in Atlanta. For the past month it’s been raining NON STOP. (And as I type this, it’s storming. Go figure!)
However, lately the sun has been shining through the gray, stormy clouds, filling me with happiness and joy once again! And it’s also having me crave refreshing summery salad creations.
Thus, this Shrimp & Cucumber Summer Salad was born!
I’ll be honest with you, part of this was created because we were totally out of groceries and I used the last bits of whatever I had to make this. So creativity and necessity really is the key to new recipes! ( At least for me, anyway.)
This is a really light, summery meal you can eat outside on your balcony. The following recipe makes about 2 1/2 servings or so.
INGREDIENTS:
1/2 lb. shrimp ( I use fresh, but you could probably use frozen, too!)
1 large cucumber, sliced thin
3 Roma tomatoes, diced
1/2 avocado
handful of fresh cilantro, chopped
3 tbs. chopped sweet onion
3 tbs. lime juice
1 tbs. cumin
1 tps. garlic salt
pinch of pepper
DIRECTIONS:
1.) Boil shrimp until cooked, then peel/devein.
2.) Throw shrimp into a little bowl with 2 tbs. lime juice to soak while you’re prepping all of the veggies!
2.) Combine all of the ingredients in a medium bowl. I like to get my hands in there and smoosh the avocado in with all the veggies! Is that weird? 😉
That’s pretty much it! You can alter some of the spices if you like, but that’s pretty much it. Very simple and easy high protein/healthy fat/low carb meal to throw together. It would also make an awesome pita bread stuffing now that I think about it, if you want some extra carbs!
